Easy Haddock Recipe – Great for Christmas Eve
This haddock recipe is one of our favorite dishes on Christmas eve. It’s very light and tastes delicious. The best part, it’s really easy to cook and it doesn’t take up space in the oven.

Ingredients

  • ½ cup olive oil
  • ½ stick butter or margarine
  • 1 tbsp crushed garlic
  • ½ cup chopped onion
  • 1 packaged sliced mushrooms
  • 1 cup white wine
  • ¼ cup fresh chopped parsley
  • salt and pepper
  • 1 can diced tomatoes (14.5 ounce) I prefer the tomato basic and oregano flavor
  • 1.5 lbs haddock (may substitute with cod)
Serves between 2 and 4 people.

Instructions

  1. Add the olive oil, butter and garlic to the saucepan and cook on low for about 5 minutes then add the onions and and saute on low/medium heat for about 10 minutes.
  2. Next add sliced black olives and white wine.
  3. Add diced tomatoes and bring to a boil.
  4. Once the sauce comes to a boil, add the haddock. You can substitute with cod as well.
  5. Sprinkle with salt, pepper and parsley. Cover and let boil for 3-5 minutes then simmer for 15 minutes or until fish is cooked. Fish will be done when it breaks off with a fork and is flakey. You will notice the fish start to break apart as it cooks.
  6. Serve over rice or angle hair pasta.
